There are many types of rice pudding. This recipe doesn’t require the use of the oven. If you are hankering for rice pudding in the middle of the summer, why heat up your kitchen by turning on the oven?

You can double this recipe if you like, but make sure you have a large pot! Cooking time may increase due to the increased volume of liquid.
Ingredients
- 1 cup cooked rice*
- 4 cups milk
- 1/2 cup raisins
- 4 egg yokes, beaten
- 1/2 cup sugar
- Peel of one orange or lemon, grated
- 1 teaspoon vanilla
- Seedless grapes (if wanted)
- Cinnamon
Instructions
*No cooked rice? Then do this:
- 2/3 cup water (with a pinch of salt)
- 1/2 cup rice
- Bring water to a boil (covered)
- Add rice and pinch of salt
- Cook 4 minutes
- Remove from heat and keep covered.
Make the pudding:
- Scald milk
- Add raisins
- Stir in cooked rice
- Cook over low heat for 35 minutes then remove from heat
- Cream yokes with sugar
- Stir into rice mixture
- Stir in grated peel
- Cook and stir constantly until thick and creamy
- Remove from heat
- Stir in vanilla
- Pour either into individual serving dishes or one bowl
- Garnish with grapes if desired
- Sprinkle some cinnamon on top
- Serve hot or chill in the fridge
